Since 2020, he has become a trusted culinary presence in West Texas, serving one family daily and several families weekly. His work extends beyond the table as well—this year he launched “Puppy Pantry,” a partnership with a local dog daycare providing gourmet, chef‑crafted meals and treats for dogs. Chef Clay's style is best described as continental: versatile, deeply informed, and unrestricted by borders. His menus draw from extensive research into global cuisines and advanced techniques, ensuring that every dish feels both contemporary and timeless. Among the experiences that consistently awe his clients are his signature Beef Wellington, meticulously curated seven‑course dinners, and bespoke wine‑paired menus. He is adept at accommodating a wide range of dietary needs and allergies, and he offers macro‑balanced meal preparation for clients who require precise nutritional planning.
